Beetroot and Bramley Apple burger on a bed of pumpkin and sweet potato puree, with a medley of roasted vegetables
Serves 4 Prepare 15mins Cook 25/30mins Cost per serving £2.44
All the beautiful colours of autumn have arrived and with the launch of our seasonal burger ‘Beetroot & Bramley Apple’ I have decided to create a supper dish to truly epitomise the English countryside.
For the Puree you will need:
1tbsp olive oil
1 large onion, peeled and finely chopped
450g pumpkin, peeled, seeds removed and diced
450g sweet potato, peeled and diced
225g potato, peeled and diced
300ml vegetable stock
4tbsp cream (optional)
Salt and black pepper to taste
Nutmeg to taste
1. Heat the oil in a heavy based pan and sweat the onions until translucent
2. Add the vegetable stock followed by the vegetables and cook until soft (25mins)
3. Drain thoroughly and with an electric beater puree until smooth
4. Salt and pepper to taste and a good amount of nutmeg
Whilst the potatoes are cooking prepare your roasted vegetables:
225g carrot, peeled and chopped into even chunks
225g parsnip, peeled and chopped into even chunks
225g beetroot, peeled and chopped into even chunks
2tbsp rapeseed oil
2tbsp runny honey
A few sprigs of rosemary
Salt and pepper to taste
1. Place vegetables in roasting tin with sprigs of rosemary
2. Evenly drizzle oil and honey over the top and give the tin a good shake
3. Give them a good grind of salt and pepper
4. Place in the oven at 200C for approx. 25 mins until golden round edges and soft
And finally your burger (1 per person)
Heat a griddle pan and place the burgers in the pan – cook for 5- 8 mins on each side depending on how you like your beef cooked.
To plate up: place a good spoonful of puree on your plate and place the burger on the top and serve with the roasted vegetables – a perfect meal to enjoy with friends and family alike on an autumn evening. Not only is this a really filling meal but it is also very healthy too - brilliant for anyone having to watch their waistline before Christmas too.
