With beef like this, I keep it simple. Just a sprinkling of salt and pepper and then put it in a oven at 190 degrees (20mins per 450g for medium). It has plenty of fat around it so you don’t need oil nor butter on top. I’ll cook the veg with lots of herbs such as rosemary but this beef speaks for itself.<br />
Delicious for cold beef slices for the next few days too.</p>
